Peanut Butter Blossoms

It seems that every year we are thinking about Christmas earlier and earlier. In the past, it was always Black Friday signaling the official start of the Christmas season– this year the stores swapped out their Halloween and fall decor and foods on November 1st. Wow.

I am a huge fan of Christmas. I love everything about the holidays. The music, the baking, the family time and of course the gifts đŸ˜‰

My absolute favorite cookie to make at Christmas time is the peanut butter blossom. Mmm. Chocolate and peanut butter are such an amazing combination.

This year I changed up my peanut butter blossom recipe slightly. Instead of using the traditional Skippy peanut butter from a jar, I decided to use Mighty Nut powdered peanut butter– specifically the flax and chia variation.

I feel a tad bit better adding something healthy to my favorite holiday treat. Although I still caution you to eat these cookies in moderation.

What I noticed with these peanut butter blossoms is that the Mighty Nut powdered peanut butter made the cookies very light and fluffy. The peanut butter taste was also slightly more mild. But personally, I liked them better than the original.
