Pumpkin Muffin Squares featuring Fit Body Bakery {giveaway}

Autumn is hands-down my favorite time of the year. Cool crisp air, sweaters, boots, and pumpkin everything. Seriously, I’ve been consuming multiple pumpkin flavored treats every day since the beginning of October– Pumpkin spice creamer in my coffee, pumpkin pie “green” smoothie for breakfast, and most recently these delicious pumpkin muffin squares as an afternoon treat.

When Fit Body Bakery sent me a box of their Motivator Muffin Mix, I had no problem deciding what to make with it. Obviously, pumpkin would be included! 

I had just received a really neat square Pampered Chef baking tin for my birthday, so instead of normal muffins {boring!} I decided to give my new baking tin a whirl and make muffin squares


  • Motivator Muffin Mix
  • 1 cup milk {any variation, but I used regular 1% milk}
  • 1/2 cup applesauce
  • 4 egg whites
  • 1 cup pumpkin puree

note: I used day old eggs from out backyard hens and homemade applesauce

  • 1 cup brown sugar
  • 1/2 cup flour
  • 1/2 tablespoon pumpkin pie spice
  • 1/2 cup butter {melted}


Preheat oven to 350° F. Combine Motivator Muffin Mix, milk, applesauce, pumpkin puree and eggs. Mix until smooth. Either spray muffin tin with cooking spray {I love the coconut oil spray} or insert muffin wrappers into tin. Fill tin with batter and bake for 15 minutes.

While muffins are baking, melt butter then combine brown sugar, flour and pumpkin pie spice to make the glaze. You can add more brown sugar or pumpkin pie spice to taste. 

Pull muffins out of the oven, add glaze {you’ll need to be quick!}, then bake for 5 more minutes. Let muffins cool before eating.

Let me just tell you how much of a struggle it has been to not eat all the pumpkin muffins!
