One of my absolute favorite treats is brownies. Especially warm straight-out-of-the-oven brownies.
The problem is– brownies really aren’t very good for you. My general approach to eating is all about balance. I don’t feel guilty for eating a treat once in awhile. But if I can make my favorite treats healthier I’m all for it!
I recently received two bottles of powdered peanut butter from Mighty Nut. What better way to experiment with a new-to-me product than to concoct a gooey healthy{ish} chocolate peanut butter brownie!
Ingredients
- 1/4 cup Mighty Nut Original Powdered Peanut Butter
- 2/3 cup honey
- 1/3 cup cocoa powder
- 1/2 cup whole-wheat flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup applesauce
- 2 tablespoons olive oil
- 1 large egg
- 3/4 teaspoon pure vanilla extract
- peanut butter chips {to desired taste}
- coconut oil cooking spray
I used local honey, a fresh egg from our backyard hens, and homemade applesauce. I love knowing where my food comes from 🙂
Directions
Preheat the over to 350°F. Spray an 8 inch pan with the coconut oil cooking spray.
Combine dry ingredients {powdered peanut butter, flour, baking powder, baking soda and salt} in small bowl.
Microwave honey until runny and almost bubbling {approximately 45 to 60 seconds}, then add the cocoa powder and stir until well mixed. Let cool to room temperature.
Combine applesauce, oil, egg and vanilla in a large bowl. Add the honey mixture and whisk until smooth. Finally add the mixture of dry ingredients and stir until no trace of flour remains.
Scrape the batter into the 8 inch prepared pan. Sprinkle top of batter with peanut butter chips.
Bake for approximately 25 minutes. Serve warm and gooey with a large glass of milk!
