Today I want to share with you one of my favorite meals. Vegetable Curry! This meal requires few ingredients and is simple to make. Let’s get started!
Cauliflower, cut into small chunks
Onion, cut into small chunks
Curry Simmer Sauce (1 jar)
Coconut Milk (1 can)
1 tbsp Unsalted Butter
You can add or substitute vegetables! The amount of each you add will be up to your liking. I typically do 2/3 head of cauliflower, the whole bag of frozen peas, and the whole onion.
Start by sautéing the onion. In a skillet melt the unsalted butter. Add onion, and cook on medium-high heat until onions are translucent in color.
In a medium pot combine all vegetables, the curry simmer sauce, and the coconut milk. Stir and cover. Cook on medium heat until vegetables are tender. Approximately 20-30 minutes. Stir contents a few times throughout cooking to prevent sticking.
While vegetables and sauce are simmering prepare basmati rice. For 1 cup cooked rice, bring 2 cups water to a boil. Once water is boiling add rice, cover, and reduce heat to low. Cook rice until all water is absorbed. Usually the rice gets done around the same time the vegetables and sauce are done. Keep rice covered, but remove rice from heat until ready to use.
Heat naan in toaster over.
Serve vegetables and sauce over basmati rice with toasted naan on the side.
